Corvezzo Organic Prosecco DOC extra dry – Organic and Vegan.
This wine is organic and vegan certified. wine making uses wild yeast and cultured wild yeast, the resultant wine low in alcohol – 11.5%. This is from the select line and is a superior prosecco.
Grape – 85% Glera 15% DOC admitted grapes
Vinification – Soft cold crushing and pressing
2nd fermentation – 60 days, charmat method. 12g/l residual sugar
Colour – Straw yellow with golden edges
Nose – Floral, apple and banana
Palate – pleasant, well balanced with nice fine mouthfeel with clean finish
Pairing – great starter or with sashimi or a salmon salad.
