The vintage from Frankland River was characterised by moderate and dry conditions punctuated by several rain events during harvest. A return to healthy rainfall levels in the preceding winter and a wet, cool spring resulted in healthy vines carrying a good crop. This meant that the ripening and picking times were roughly three weeks later than the short term average. The weather conditions resulted in the harvest of Frankland River Cabernet Sauvignon with an abundance of dark plum, cassis and chocolate flavours, with hints of thyme and mint and mouth coating tannins.

Winemaker’s Notes The fruit was machine harvested in the cool of night to retain flavour and freshness. Fermented in static fermenters for ten days the wine was gently pressed off skins, to complete alcoholic fermentation in stainless steel tank. The wine was then racked and inoculated for malolactic fermentation. Following malolactic fermentation, the wine spent 10 months maturation in oak before select parcels were blended and prepared for bottling.

Tasting Notes The Houghton Cabernet Sauvignon is an excellent example of Western Australian Cabernet displaying typical leafy, blackcurrant, dark red fruits, and a touch of oak derived spice.
