Delicate salmon pink NOSE Fresh and lifted with flavours of white nougat, cranberry fairy floss and ruby grape fruit.
Is elegant fine with persistent flavours of black currant and mulberry. Rich soft and persistent, with overtones of tropical fruits, and strawberries. This is a modern Australian Rose, which is balanced and without any phenolics.
The Shiraz for this wine was harvested from the Yallingup Estate Block 6. Machine picked at 12.5°Be in the cool of the morning and pressed immediately without any skin contact. During settling a small colour correction was made using carbon and racked to ferment. Fermentation was at 13°C to retain freshness and varietal character. Once dry the wine was fined with skim milk and PVPP, stabilized and bottled early to retain freshness. An elevated CO2 imparts a slight spritz on the palate.
